Ingredients and Substitutions
This dish is very easy with just a few simple ingredients. I always meal plan ahead of time, so I make sure I have all the ingredients I need. I have to plan as I grocery shop Monthly along with some short grocery trips.
- Sausage – My favorite to use for this recipe is smoked sausage, but you can use any fully cooked sausage.
- Potatoes – I use regular potatoes Idaho or Russet, but you could also use yellow, gold, or red if desired. The most important suggestion is to cut into small, uniform pieces for even cooking.
- Green Beans – You could use either fresh, canned, or frozen green beans. I prefer either fresh or canned, because frozen I am just not a fan of those for this recipe.
- Carrots – You can use either fresh, canned, or frozen. I have used fresh, but the problem is sometimes they do not get done enough. I usually stick with the canned version.
- Garlic – If you are deciding which is best, you have options. You can use fresh garlic, garlic in a jar, or garlic powder. I don’t always have fresh garlic on hand.
- Dried Herbs – I use oregano and basil and sometimes seasoned salt. You could also use Italian Seasoning as well.
- Olive Oil – This oil is the healthiest of the oils to use.
- Salt and Pepper – Use this to taste.
How To Make Sheet Pan Sausage and Veggies
You don’t need anything special with this recipe, just an oven and a sheet pan. This is one of the easiest recipes I have.
Start by cutting up the potatoes into one-inch chunks cut the smoked sausage into 1/4 inch thickness and spread them out on the sheet. Then, I add the green beans and carrots onto the sheet and spread them out. It works better to use 2 sheets so they are spread out more. Of course, it depends on the size of the sheets you cook with.
After all the sausage and veggies are on the pan it is time to drizzle with olive oil and sprinkle with salt, pepper, garlic, basil, oregano, and seasoned salt. Stir so everything is well seasoned.
Place in the oven and bake for 20 to 25 minutes or until potatoes are tender and cooked through. You can even swap out for other veggies if you desire.
What To Serve With Sausage and the Veggies?
This dish is perfect as a standalone meal. If you want something additional to have you could opt for a salad, cottage cheese, or macaroni salad.

Ingredients
- 4 fully cooked sausages, sliced into circles 1/4 inch thick
- 12 oz fresh, canned, or frozen green beans
- 1 pound potatoes, cut into 1-inch chunks
- 3 tbsp olive oil, extra virgin
- 3/4 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp seasoned salt
Instructions
- Preheat the oven to 425 degrees. Line your baking sheet with parchment paper.
- Spread green beans, potatoes, carrots, and sausage on the baking sheet. They do not need to be kept separate. Drizzle with olive oil. Sprinkle with salt, pepper, garlic, basil, oregano, and seasoned salt. Stir so everything is well seasoned. Spread sausage and veggies in a single layer the best that you can after stirring.
- Place in the oven and bake for 20 to 25 minutes or until potatoes are tender and cooked through.
Notes
- You can use any potato variety you desire.
- Cut up your potatoes in 1 inch chunks
- You can either swap out for another veggies or add different veggies, but if you do you may need 2 baking sheets.
